The Umbrian Thanksgiving Menu: Simple, Rich & Authentic (Serves 4)
Our menu focuses on maximizing flavor with minimal effort.


The Main Event: Whole Roasted Umbrian Turkey
(Tacchino Intero Arrosto)

We honor the tradition of the whole bird, featuring a spectacular presentation and a rustic, savory stuffing based on local Umbrian flavors.

Ingredients (4 Servings) Quantity
Whole Turkey Hen (Small Size) Approx. 2.5 – 3 kg (5.5 – 6.5 lbs)
Local Bread/Farro Crumbs (for stuffing) 150 g
Umbrian Sausage (Pork) 150 g (Sautéed)
Wild Mushrooms (Mixed, sautéed) 100 g
Chestnuts (Cooked, chopped) 50 g
Fresh Sage & Rosemary 2 Tbsp (Finely chopped)
Chicken or Vegetable Broth 120 ml (to moisten stuffing)
Le Torri di Bagnara EVO Oil As needed for roasting and basting
Dry White Wine 120                  (for basting)


Chef’s Tip:
The turkey should be stuffed loosely. Rub the bird generously with olive oil and herbs before roasting. Baste frequently with the white wine and Le Torri di Bagnara EVO Oil mixture for a spectacularly crisp skin and juicy meat.


A Rustic Side: Farro Salad with Roasted Squash & Chestnuts
(Replacing traditional sweet sides)

Estate Grown Farro (Spelt) 200 g
Yellow Pumpkin or Butternut Squash 300 g (Cubed)
Roasted & Shelled Chestnuts 50 g (Crumbled)
Pomegranate 50 g (Seeds from approx. half a fruit)
Apple Cider Vinegar (Local) 1 Tbsp

The Essential Sauce: Sagrantino Plum Reduction
(A rich, wine-infused cranberry substitute)

Ingredients (4 Servings) Quantity
Sagrantino di Montefalco (or a robust red) 200 ml
Dried Plums (or dried figs) 100 g (Chopped)
Local Organic Honey 1 Tbsp
Water 50 ml

 

The Vegetable Star: Sautéed Greens with Truffle Salt
(A simple, elegant green dish)

Ingredients (4 Servings) Quantity
Leafy Greens (Chard, Spinach, or Kale) 500 g (Cleaned)
Garlic 1 Clove
